To my Northern friends I am sure we look pretty silly, but for us Southern folks, snow is a big deal. We may see it a handful of times a year here in North Georgia. Being a Floridian I am not very cold natured, but I seemed to warm up to it today. We had a really good time playing in the snow. All the public school kids are out of school. We ran some errands yesterday and a man asked my son "I bet you are glad to be out of school for the snow". He looked at the man with a confused smile and told him: "I'm not out of school, I'm home schooled". HAHA! Yes, homeschooling children do not get snow days off! No good snow day would be complete without CHILI!
Littlefoot Farm Quick & Easy Chicken White Bean Chili
Ingredients:
- 1 large Chicken Breast cut into chunks
- 1 can of Garbanzo Beans or Chick peas
- 1 can of Northern Beans
- 1 can of Diced Tomatoes, drained, or 1 can of Spaghetti sauce (if you use well drained diced tomatoes you will have a true white chili)
- 1 pack of Chili Seasoning
- 2 cups of Milk
- 2 teaspoons of Corn Starch (if needed to thicken)
- 1 tbs of cooking oil
Directions: Cube your chicken. Add oil to skillet and add cubed chicken. Cook on med-high heat until chicken is cooked through, stirring as needing. In a large pot add everything else, but the corn starch. Add the chicken and oil. Stir and cook until a nice boil has begun. Add corn starch if needed. *Serve with crackers or cornbread. **Garnish with shredded cheese, green onions, cooked bacon and/or sour cream if desired.
